Clay-limestone soil covered with pebbles.

 

Syrah 35%, Grenache Noir 25%, Cinsault 23%, Mourvèdre 9%, Carignan 8%

Manual. Double trellising thus optimizing photosynthesis for optimum maturity. Green harvest.

 

Vinification :

Maceration in whole bunches for 20% Syrah, traditional vinification with destemming and crushing for the 4 other varieties.

Punching down and pumping over, temperature control in temperature-controlled stainless steel vats. Separate aging in oak barrels for Carignan, Mourvèdre and 15% Syrah maceration for one year.

Manual maceration for cinsault and syrah. Double trellising thus optimizing photosynthesis for optimum maturity. Green harvest.

 

Vinification:

Maceration in whole bunches for 20% Syrah, traditional vinification with destemming and crushing for Grenache Noir, Cinsault and the remainder of Syrah. Punching down and pumping over, temperature control in temperature-controlled stainless steel vats. Breeding separated by grape variety.

Mourvèdre 40%, Grenache 40%, Syrah 20%.

Vinification:

Traditional vinification with destemming and crushing. Punching down and pumping over, temperature control in temperature-controlled stainless steel vats. Breeding separated by grape variety. Long maceration for the Syrah.

Spicy aromas of garrigue and menthol, followed by ripe strawberries and cocoa. Once aerated in the glass, aromas of violets appear with a more marked background of red fruits.

Limpid and brilliant crimson color with slight violet reflections.

The attack is soft with a good freshness, and associates in a perfect balance with the power and the sweetness of the wine. The tannins are present in good quantity. Blackcurrant aromas accompanied by violets and roasted cocoa. Good aromatic persistence with floral and roasted notes.

Vinification: 

Pneumatic pressing with juice selection. Separate fermentation for each grape variety. Cold settling. Aging in temperature-controlled stainless steel vats on fermentation lees.
